Dark Chocolate Mousse

I was starting to believe that it was one of those family legends –  one of those collective family delusions that after being repeated hundred times becomes truth.

Since the first time I visited Australia I have been hearing about this most amazing dessert that my husband’s very Dutch grandmother Sophia (more known as Oma) used to make.    A mythical chocolate mousse named Heavenly Mud.

Every time we had family meeting and I would make a very rich chocolate dessert for my father in law John, he would say:  It reminds me so much of Oma Heavenly Mud!   The thing is, the famous recipe was lost in time and nobody had a copy of it or knew how to make it.

Dark Chocolate MousseWell, now is my turn to tell a tale that resembles a fisherman story.     This weekend we were up to Toowoomba, where my in laws live and while helping them organizing some books my lovely mother in law Gabrielle gave me one of Omas recipe books – Dutch and Belgium Cooking. 

We came back home and in the next day, our cousin Mark came to visit and I decided to show him the recipe book… for our great surprise a Pile of recipe cards fell from inside the book and among them a little piece of carefully hand written paper with nothing less than the Heavenly Mud recipe!!!!

It was like finding the Food Holly Grail.   Mark couldn’t even wait and we prepared the Heavenly Mud at that same day.      Well…. according to my Hubby and Mark it wasn’t the exactly the same thing as they remember and we believe we used a different chocolate Oma used to use.    For me it was great: a very rich and thick dark chocolate mousse, there is no way of going wrong with that!

Anyway, this weekend we are preparing it again, this time for my father in law – Don’t tell him! Is a surprise!    Let’s see if I can replicate the dessert that have a special place at this family.   Keep posted for updates! :-)

Heavenly Mud
Serves: | Time:  1h  | Cost:  $$ | Difficulty: Medium

  • 50g Butter
  • 225g Dark Chocolate  (Use Milk Chocolate if you prefer)
  • 3 Eggs
  • 35g Sugar
  • 1 Tablespoon water


  1. Melt Chocolate and water over boiling water (don’t stir)
  2. Beat butter, sugar and egg yolks until light
  3. Add the Soft Chocolate.
  4. Beat the egg whites very stiff.   Mix the Chocolate Mixture into it.
  5. Put in flat champagne glasses put stiffly beaten cream on it and decorate with ginger

  1. Oh!!! Baking at 40C heat aint no good but you know, I live in Queensland… Winter here means 80F (27C) :-)) Summer here… 40…42…45 (113C)… So my choices are: baking with heat, baking with less heat. At this point i think cold butter for pie dough is overrated hehehe
