Algarve Almond Tart

This dessert in typical from Algarve, the most southern Portuguese region and, among other reasons, famous for it’s almonds.

Legend says that some centuries ago, when Algarve was known as Al Garb and belonged to the Moors, the Caliph Ibn-Almundim was married to Gilda, a Northen princess.

Gilda was always sad and never smiled.    The Caliph searched for answers to her sadness all over the world and one day he was told that his wife was missing the white snow-covered fields from her homeland.

Ibn-Almundim then brought thousands of almonds tree to Algarve and planted them right in front of his Princess window.    When they blossomed the flowers covered his land with white petals,creating an illusion that the field was covered in snow and making Gilda smile.

This recipe was given to me by my friend Cristina Barbosa and I would like to dedicate this post to her that now is back to our beautiful Portugal.

 Base

  • 100g Butter
  • 100g Sugar
  • 2 Eggs
  • 50g Almond Meal
  • 100g Self Rasing Flour

Topping

  •  4 tablespoons Milk
  • 100g butter
  • 100g Sugar
  • 200g Almonds

    Preparing the Base

    1. Pre-heat the oven to 180C.
    2. In a large bowl cream the butter with the sugar.  
    3. Add the eggs one at a time always wisking.
    4. Stir in the Almond meal and the flour.
    5. Bake it in a small springform tin for about 20 minutes.
    6. Wait for it to coll down a bit before taking out of the tin.

     Preparing the Topping

    1. In a medium saucepan combine the milk, butter, sugar and almonds
    2. Bring it to boil in a medium heat
    3. Reduce the heat and let it simmer until caramelised


    Assembling

    1. Spread the caramelized almonds while still hot, on the top of the tart.
